Ingredients
  • Paneer made from 500 ml toned milk
  • ½ cup quinoa (uncooked)
  • 1 medium sweet potato, 150 gms
  • 2 slices white bread
  • ½ cup french beans, chopped finely
  • ½ cup carrots, chopped finely
  • 3-4 cloves garlic, chopped finely
  • 1 ½ tsp dried oregano
  • ½ tsp black pepper powder
  • 6 tbsp low-fat cheese, grated
  • Salt as per taste
  • 3 tbsp oil
Method
  1. Pressure cook the quinoa with ¾ cups of water and a pinch of salt for 2 whistles. When cooled, drain and keep aside.
  2. Cut the sweet potato into big chunks and pressure cook it. When cooled, peel and mash it. Keep aside.
  3. Toast the bread slices. Grind to a powder. Keep aside.
  4. Heat ½ tbsp oil in a pan. Saute garlic for a few seconds.
  5. Add french beans and carrots with some salt. Saute for about 1 ½ minutes.
  6. Add mashed sweet potato and crumbled paneer. Add salt and cook for a minute.
  7. Lastly add the quinoa, oregano, salt and pepper. Cook for another minute.
  8. Transfer to a broad plate. let it cool slightly.
  9. Add the cheese and mix well.
  10. Divide into 20 equal portions.
  11. Roll each portion to form a ball shape and then flatten it to form a pattice. Coat each pattice with some breadcrumbs.
  12. Repeat for the remaining portions.
  13. Heat a non-stick pan, put ½ tsp oil and swirl it around to coat the bottom of the pan.
  14. Use the remaining oil and roast all the pattice till cooked on both the sides.
  15. Serve with any dip of your choice.
