Ingredients
- 1 large mango, deseeded and cubed
- 100 gms mixed lettuce (Romaine, Butterhead, Red leaf)
- 8 Cherry tomatoes, halved
- 4 tbsp microgreens (optional)
- 10 gms caramelized Pecans, coarsely pounded (optional)
For the dressing:
- 1 tbsp honey
- ½ tsp lime juice
- ½ tsp red chilli flakes
- ¼ tsp black pepper powder
- Salt as per taste
- 2 tsp extra virgin olive oil
Method
- To make the dressing, combine all the ingredients for the dressing in an air-tight jar and shake vigorously. Keep aside.
- Rinse the lettuce, pat dry with a kitchen towel and chop coarsely into big pieces.
- Transfer into a serving bowl.
- Add mango, tomatoes and a little salt.
- Pour the dressing over the salad just before serving and toss gently. Garnish with Pecans and microgreens.
