Mango Lettuce Salad

Ingredients

  • 1 large mango, deseeded and cubed
  • 100 gms mixed lettuce (Romaine, Butterhead, Red leaf)
  • 8 Cherry tomatoes, halved
  • 4 tbsp microgreens (optional)
  • 10 gms caramelized Pecans, coarsely pounded (optional)

For the dressing:

  • 1 tbsp honey
  • ½ tsp lime juice
  • ½ tsp red chilli flakes
  • ¼ tsp black pepper powder
  • Salt as per taste
  • 2 tsp extra virgin olive oil

Method

  1. To make the dressing, combine all the ingredients for the dressing in an air-tight jar and shake vigorously. Keep aside.
  2. Rinse the lettuce, pat dry with a kitchen towel and chop coarsely into big pieces.
  3. Transfer into a serving bowl.
  4. Add mango, tomatoes and a little salt.
  5. Pour the dressing over the salad just before serving and toss gently. Garnish with Pecans and microgreens.
